Me neither until I Googled it. I thought a Spanish omellete was a fried egg + whatever veg/cheese/meat you wanted.

I think next time I'll do a variation. Sweet potatoes, bit of cheese, more onion and mushrooms! Yum yum!

Yes, cheese strong type, I add touch of garlic, but several eggs are needed, but not fried scrambled to make big ommlette.

Oh god, I love sweet potato.

Don't think I fancy any kind of potato in an omelette though. Seems wrong.
