According to how many you are cooking for . .

Dice potatoes about half an inch.

Same with choritzo.

Par boil potatoes, drain and then shallow fry in a little olive oil. Turn to achieve a golden crust on each side. Add diced choritzo and fry 3-4 minutes, add spring onions sliced diagonally and fry another two minutes.

Remove with a slotted spoon and keep warm.

Fry an egg in the now flavoured oil, return mixture to a warm plate and place the egg on top.

Enjoy !

My wife made a lovely pea soup last night. It was a Jamie Oliver recipe but please don't anyone hold that against her.

I understand your wife can cook carrots and peas in the same pot.

Porridge, Billwill style

Porridge can be pretty boring stuff, but is good for reducing cholesterol, so here is my recipe for making it more enticing.

Ingredients:
( a ) porridge oats
( b ) skimmed milk
( c ) tangerine or clementine orange or strawberries or blueberries
( e ) maple syrup (or golden syrup flavoured with maple).
( f ) toffee squeezy juice (normally used on icecream).

Into a microwaveable bowl, measure out about 2/3 of a cup of oats.

Fill the cup with water & add it to the oats

Swirl the bowl to mix the ingredients evenly.

Put in the microwave (For a grade E oven the time required is five minutes).

Meanwhile peel the orange and separate the segments or wash the berries & remove any strawberry tops.

When the microwave pings, lift out the (HOT) bowl. Decorate the top by squeezing a little bit of maple syrup and toffee juice over it choosing a pattern to suit your mood. (hearts, diamonds, pound signs, Olympic rings)

Add the orange segments or berries or some peanuts, then a thin layer of milk.

Eat while still hot.

{you can use your spoon to make canals in the porridge which will let the liquid milk flow to the bit you are going to eat next).
