Explain to me - how it can be open all hours, if it was open during daytime (until 9 PM)? And not around the clock, as the name would suggest?

It's a colloquialism really. Just means open a lot, not literally 24/7.

And for what it's worth, I always assumed it was more 6am ish until 11pm, something like that.

although, in those days, those were all the hours it could open so it was literally open all the hours that they could open.

I almost said that, but I are too young to knows about thems days.
